The grapes were picked early in the morning on August 30, 2016 at cool temperatures. After de-stemming and crushing, the grapes are pressed off the skins. Fermentation is conducted 50% in stainless steel between 54 and 58F and 50% in barrels. Aging followed in French Oak for 3 months, which creates a rounder, richer more sophisticated Sauvignon Blanc. This wine presents with a delightful apricot and pear nose, followed with flavors of dried apricots and mineral characteristics. The wine shows firm acidity. The finish is clean and crisp with lingering apricot notes. Try this Sauvignon Blanc with lighter fish and pasta dishes.
