GRAPE SOURCE: Like the wine above, our 2014 Reserve Cabernet Sauvignon grows on Bill and Yvonne's home property in Alexander Valley. This 45 acre ranch is ideal for producing the high quality fruit that will become our Reserve Cabernet.
WINEMAKING: As with all Mill Creek wines, the fruit was collected early in the morning of October 7th and 8th, 2014, while the fruit was still cold. After the fruit gets to the winery, the clusters are gently de-stemmed and then filled into stainless steel tanks. Preceding the fermentation is a 3-5 day cold soak. The must is then inoculated with yeast and transferred into open top fermentors where it is mixed 2-3 times per day to extract flavors, color, and tannin from the skins. After pressing, the new wine is filled into 75% new French oak barrels and aged for approximately 24 months. Bottling was on January 26, 2017.
A complex nose of dark fruits, cola, and dried herbs precede like flavors. The wine has an elevated middle with lush, full tannins throughout.
