Winemaker Notes
Our 2006 Merlot was harvested on September 28th and 29th, 2006 from our Dry Creek Valley estate vineyard. Merlot grows in the vineyard right in front of the tasting room. After early morning harvest, the stems and any leaves were removed from the fruit. The fruit was lightly crushed and the mixture (must) was put in a jacketed stainless steel tank for fermentation. The jacketed tanks maintain a lower fermentation temperature, thus enhancing the fruit notes in the wine. After fermentation, the wine is transferred to American Oak barrels for over a year of aging.
Tasting Notes
Aromas of strawberry jam, ripe plum and spice lead to flavors of sweet allspice, plum, cola and berries. This is a medium bodied, dry wine with light tannins and a lingering finish. It pairs well with grilled spring lamb chops, and grilled pork chops. It also complements dishes featuring bleu cheese.
