Aging: 5 months Neutral French Oak
Harvest was very early in the morning so the grapes are delivered to the winery while still cold. They were immediately crushed, pressed and then fermented in stainless steel tanks between 53°F and 60°F. The wine is allowed to age on the lees for a short period and is then put in neutral French oak for another 5 months. After aging it is blended and bottled. This Chardonnay begins with notes of mineral and pineapple layered with a hint of pear. Flavors are of pineapple, mandarin orange and honeysuckle. The finish is fresh and crisp showing mandarin orange and mineral. Ample acidity provides a lively, bright finish. Excellent served with mild cheeses, such as brie, or with chicken, most shellfish, and pasta salads. It would also be an excellent complement to chicken Caesar salad.
