2005 Reserve Cabernet Sauvignon

 

This wine is 100% Cabernet Sauvignon from our Alexander Valley property. It receives open-top fermentation with pump-over twice a day and punch down three times a day. It shows a complex, rich cherry, anise, and blackberry nose with hints of cedar. The flavors are briary, berry, and spice with suggestions of chocolate, well-integrated oak nuances and moderate finishing tannins. Pair this wine with a grilled New York strip, a horseradish encrusted prime rib, or a marinated tri-tip. Also excellent paired with sharp cheddar or huntsman cheeses.

Winemaker's Notes

 

This wine is 100% Cabernet from our Alexander Valley property.  It receives open-top fermentation with pump-overs twice a day and punch downs three times a day.  After malolactic fermentation, the wine is racked to and aged for 18 months in French oak (32% new barrel).  

 

Tasting Notes

 A distinct nose of rose petal, boysenberry, and cedar with flavors of clove and smoke and raspberry.  Finishes with lingering, creamy, notes of berry. An elegant, sophisticated wine. Pairs well with rich red meats or strong cheeses.  Try with filet mignon, pheasant or walnuts over a rich blue cheese.
