Winemaker Notes
Grapes for our Reserve Cabernet Sauvignon are grown on the Kreck Family's south facing vineyard in the southern end of Alexander Valley. After harvest, the clusters are gently de-stemmed and then filled into stainless steel tanks. Preceding the fermentation is a 4-6 day cold soak. The must is then inoculated with yeast then mixed 2-3 times per day. After pressing, the new wine is filled into 100% new French oak barrels and aged for approximately 18 months. This wine has characteristics of blackberry, cassis and anise which give it a deep and attractive complexity. Aging in new french oak lends layers of richness. Pair with a grilled New York strip with a spicy rub, a marinated tri-tip or any bold cheese. With only 92 cases, this is an extremely limited production wine. Enjoy now or age for several more years.
