2019 Pinot Noir - Swensrud Vineyard
Our Pinot comes from the Swensrud property which is located on Westside Road about 4 miles south of Mill Creek Vineyards. The clusters were de-stemmed, except for about 15% which was "whole cluster" and fermented after a 5-day cold soak. Fermentation was done in Open Top tanks where the wine was punched down 3 times per day. Following fermentation, the wine was aged in French oak (20% new) for 14 months.
The nose is full of strawberry with a hint of mint. Elegant strawberry flavors linger and lead to a tart cherry finish. This wine would pair well with prosciutto, goat cheese or salmon.
