2021 Roller's Song Cabernet Sauvignon

Winemaker's Notes

This Roller’s Song Cabernet Sauvignon was picked on September 17, 2021. As with all fruit from the Kreck Estate vineyard, the grapes were hand-harvested. The fruit arrived at a perfectly ripe 24.5 Brix and was fermented in stainless steel for 10 days. After fermentation, the wine was pressed and barreled down into 20% new French oak. It was aged for 20 months before bottling, allowing the wine to integrate with the oak and develop balance while expressing its natural ripeness and engaging tannic structure.

 

Tasting Notes

The “Roller’s Song” name is a nod to Yvonne's father, who raised German Roller Canaries on the Kreck Estate property in the 1940s and 1950s.

The bouquet opens with freshly picked blackberries accented by vanilla and cedar. Layers of dark chocolate and sweet pipe tobacco unfold across the palate, creating a seamless balance of richness and structure. Firm tannins frame a complex mid-palate and provide age-worthy depth. While traditionally paired with red meats such as rack of lamb, this Cabernet also complements stuffed mushrooms, dark chocolate, and aged cheeses.
