2017 Roller's Song Cabernet - Alexander Valley
Winemaker Notes
Our 2017 Roller's Song Cabernet Sauvignon grows on Bill and Yvonne's home property in Alexander Valley. This 45 acre ranch has thin soils and a western slope, which is ideal for producing high quality fruit. The name comes from the fact that Yvonne's father raised German Roller Canaries on the property in the 1940s and 1950s. As with all Mill Creek wines, the fruit is collected early in the morning. The Cabernet was picked September 26th, 2017 while the Merlot was picked September 9th, 2017. After the fruit was delivered to the winery, the clusters were gently de-stemmed and then filled into stainless steel tanks. Preceding the fermentation was a 4 day cold soak. The must was then inoculated with BDX yeast and transferred into temperature controlled stainless steel fermentors. After pressing, the new wine was filled into 35% new French oak barrels.
Tasting Notes
The nose on this wine is classic Cabernet Sauvignon showing ripe Bing cherry and leather with a hint of juniper spice. Flavors follow the nose. The finish lingers showing Bing cherry, dark chocolate and considerable spice. Pair with Gorgonzola cheese, rack of lamb or roasted duck.
