Colorful Corn & Black Bean Salad

This easy summer salad is a bright addition to your summer BBQ.


 1/3 c. fresh lime juice

1/2 c. olive oil

1 clove garlic, minced

2 tbs. sugar

1 tsp.salt

1/8 tsp.cayenne powder

2 (15 oz) cans black beans, rinsed

4 c. frozen corn kernels

1 avocado - peeled, pitted and diced

6 mini red, yellow and orange peppers, chopped

2 tomatoes, chopped

6 green onions, thinly sliced

1/2 c. chopped fresh parsley




  1. Place lime juice, olive oil, garlic, sugar, salt, and cayenne pepper in a small jar. Cover with lid, and shake until ingredients are well mixed.
  2. In a salad bowl, combine beans, corn, avocado, bell pepper, tomatoes, green onions, and cilantro. Shake lime dressing, and pour it over the salad. Stir salad to coat vegetables and beans with dressing, and serve.
This whole salad, short the avocado, can be made the day ahead. When ready to serve just add the avocado stir again, and serve.
