2007 Chardonnay, Estate Reserve
The grapes for out 2007 Reserve Chardonnay were harvested before dawn to allow the fruit to be brought to the winery cold. After crushing and pressing, the juice was fermented in small oak barrels over approximately four weeks. During this time, the lees were stirred often. This chardonnay was aged for twelve months in 60-gallon French oak barrels and bottled the following winter. This Reserve Chardonnay begins with notes of apple and mineral. Flavors of apple and honeydew melon predominate, mixed with accents from the small oak barrels. Significant acidity imparts a fresh clean finish.
