Chicken Pasta Caesar Salad
Lovely for lunch or a light dinner on a warm summer evening.
3 cups roasted chicken breast meat – thinly sliced or shredded
11/2 cups Eliche (spiral) or Farfalle (bows) pasta - cooked
3 cups romaine lettuce - thinly sliced
2 tablespoons fresh basil - thinly sliced
1/4-cup fresh parsley - chopped
1/2-cup green onions - thinly sliced
1 ripe avocado - cubed
4 ounces Parmesan cheese - shredded
1/3 cup Caesar salad dressing, or to taste
Pre-cook and cool chicken and pasta. Mix all ingredients together and toss until all are evenly distributed. Enjoy with a glass or two of Mill Creek Chardonnay.
